Butternut Squash and Banana Smoothie Recipe

Hey there #12in12, #fitblog, and #fitfluential friends.

I’ve had this butternut squash just hanging out on my counter for longer than I care to admit. Last night before heading off to bed, I kept thinking I wonder if I can make a butternut squash smoothie for this challenge.

So I took to Google — because Google knows all — and found several recipes for Butternut Squash Smoothies and decided to create my own.

Most of the others used added sugar or added milk or yogurt and I didn’t want any of that as it defeats the purpose of this green smoothie challenge (to eat only fruits, veggies, and nuts in liquid form.)

One recipe called for steamed butternut squash but I slit it in half and roasted mine in the oven.

Here’s my not-so-green Butternut Squash smoothie recipe

  • Butternut Squash
  • Banana
  • Ground Cinnamon
  • Ground Ginger
  • Water

Directions:

  1. Cut butternut squash in half length-wise
  2. Place on a cookie sheet cut side down
  3. Bake in the oven at 350 degrees for 30 minutes or until tender (if you can stick a fork in it, it’s tender)
  4. Allow to cool
  5. Scoop butternut squash out of the shell and into the blender
  6. Add water, banana, cinnamon, and ginger (I don’t have exact measurements, add as much as you feel comfortable with) into a blender
  7. blend it until smooth

Drink up! I thought this was surprisingly good and I can’t wait to make myself another one tomorrow. I think I’ll add an apple to it to make it a bit sweeter.
